Sticky Toffee Pudding

Ingredients:
Toffee Mixture (A)
1. Butter 280g
2. Sugar 250g
3. Egg 5pcs
4. Flour 450g
5. Baking powder 5g
6. Red dates 360g
7. Baking Soda 30g
8. Water 500ml

Toffee Mixture (B)
1. Egg white 4pcs
2. Sugar 40g

Toffe Sauce
1. Butter 200g
2. Sugar 400g
3. Cream 250g

Methods
1. Remove the seeds from the dates, place into a pot with water and cook till water reduced and dates attained a mashed texture. Add in baking soda and mix in. Let it cool down.
2. Beat the butter and the sugar, add in the eggs, flour & baking powder. Pour the cooled down date mixture into the butter mixture. Mix well.
3. Use a mixer to mix Toffee Mixture (B). Beat until it is a meringue. Pour the meringue into Toffee Mixture (A). Mix well. Pour them into flour coated cups. Place into the oven and steam bake at 150 degree C for 40mins.
4. To cook the sauce, cook butter and sugar until it is caramel. pour in the cream. Cook until it is thick. When the pudding has cooked, drizzle the sauce onto the pudding.
